melenzane;<br \/>\n&#8211; 2 spicchi d&#8217;aglio;<br \/>\n&#8211; 100 gr. di pecorino grattugiato;<br \/>\n&#8211; prezzemolo;<br \/>\n&#8211; peperoncino (facoltativo);<br \/>\n&#8211; olio e.v.o;<br \/>\n&#8211; olio di semi di arachidi;<\/p>\n<p><strong>Procedimento<\/strong>:<br \/>\n1) Sciacquare per bene le cozze privandole del bisso e della barbetta tutt&#8217;attorno con l&#8217;ausilio di una spugnetta metallica, di quelle normalmente in uso in cucina.<br \/>\n2) In una padella a fondo alto soffriggere aglio, peperoncino e i gambi del prezzemolo;<br \/>\n<a d&#8217;aglio e, se volete, un altro po&#8217; di peperoncino;<br \/>\n10) unire le cozze al soffritto aggiungendo all&#8217;intingolo l&#8217;acqua di cottura in precedenza filtrata;<br \/>\n<a
